How should people think about butter? This is quite a controversial topic, and it all stems from the vilification of saturated fats back in the 80s, which was based on improper research.
The vilification of saturated fats occurred while there was a lot of monocropping of foods such as wheat and soy and other compounds that were turned into oil, particularly rapeseed and canola.
This all coincided with the production of synthetic fats like margarine and crisco. In the years since then, we've come to learn that these synthetic oils are incredibly fragile. When these oils are heated, they create free radicals. Free radicals essentially rip apart the membrane of your cells. This is a big problem for human health.
The vilification of saturated fats was really unfortunate. This video breaks down exactly why you shouldn't fear healthy saturated fats like grass-fed butter, lard, tallow, and virgin coconut oil. On the other hand, you should avoid processed oils like canola, vegetable, safflower, soy, peanut, and any others like the plague!
